  • Steamed in a dashi-based sauce, this Instant Pot Chawanmushi is a savory Japanese egg custard made with seasonal ingredients. Delicate and silky smooth, it makes a perfect appetizer to start your meal!

    INGREDIENTS
    - Egg Mixture -
    1 ¾ cup dashi (400 ml) (Use kombu dashi for vegetarian)
    3 large eggs
    1 tsp mirin
    1 tsp Usukuchi (Light-Color) Soy Sauce (Or use regular soy sauce or gluten-free soy sauce for GF)
    ½ tsp kosher salt
    - Chawanmushi Ingredients -
    1 chicken thigh (3.4 oz, 96 g) (skip for vegetarian)
    5 shrimp (2.6 oz, 73 g) (skip for vegetarian)
    2 Tbsp sake (1 Tbsp each for thigh and shrimp)
    1.4 oz carrot (40 g, roughly 1.5”)
    5 stalks mitsuba (Japanese parsley)
    2.3 oz shimeji mushrooms (65 g) (or any mushrooms)
    1 inch Kamaboko (fish cake) (skip for vegetarian)

    This is one of my favorite instant pot tricks. I use chicken broth and whatever leftover protein and veg is in my fridge and serve for breakfast. Not nearly as elegant but an excellent leftover makeover method.

    Definitely a favorite childhood memory, my mom didnt have that fancy cooker she just used her oven and it still came out great!

      That's true. In Japan (and some Asian countries), most people don't have an oven, so we make it in a steamer or pot. I have those stovetop recipes on my blog too. :)

    i attempted this recipe for the first time today and it was a success! i used only one egg, and scaled all other ingredients accordingly because i only have 2 very small ceramic cups meant for dipping sauce. steamed them for 10 mins and done! i will definitely get proper ramekins and make this for family & friends :)

    this is one of my favourite food. i just moved to the uk from hong kong. japanese restaurants are hard to find here and only a few of them have chawanmushi. in hong kong there were a lot of it and i really loved the one from yoshinkya. i won’t be able to eat that anymore but thank you for this.

    Thank you so much for this recipe :) This is a god sent recipe. However, I’ve discarded mirin because I am a muslim but it still tastes exactly like the ones from the Japanese restaurants. Such a simple recipe you will definitely succeed on the first try. I’ve made this about 5 times now and the only thing you should worry is how long you should steam it. Check regularly if you’re worried 😉

      1) Yes, you can, and I mentioned the methods in the post (www.justonecookbook.com/instant-pot-chawanmushi/). I also have 3-4 chawanmushi recipes used stovetop method on my website.
      2) I got them at Daiso - Japanese dollar store. :) You can find them at Japanese home goods store or maybe supermarkets. And amazon!

    I tasted 茶碗蒸し for the first time 2 years ago in Fukuoka, in a very famous restaurant, chikae.
    Japanese people who were with me told that it can have a strange taste for a gaijin, some foreigners don't like it.
